Protein Pancakes

Ingredients

1/2 cup of oats – ground up to create oat flour

1/2 cup egg whites

1/4 – 1/2 scoop protein powder (vanilla or cinnabun are my go-to for this recipe)

2 tbsp peanut butter

1/2 cup berries

REAL Maple syrup

Directions

Grind oats in blender (I use my magic bullet) to create oat flour.

Heat pan.

Mix together oat flour, egg whites and protein powder.

Pout mixture onto pan and wait for bubbles to occur. Flip pancake.

Place pancake on plate and spread peanut butter. Top with second pancake.

Add berries and maple syrup.

Enjoy!

Notes

I sometimes substitute almond butter instead of peanut butter.

When I am training will use Walden Farms syrup instead of real maple syrup (have to watch sugar intake, even when its natural sugars!)

I rarely measure my ingredients so sometimes I add a bit of water if I have made the mix to thick.
