I was always a breakfast cereal kind of gal growing up. It was quick and I wasn’t wasting any of my precious sleeping time to make something healthy in the mornings. It’s funny because looking back I always remember falling asleep in my morning classes in school.  I now realize I was on such a sugar high as I made my way to school that I would be crashing before first period was even over!

I find a lot of people skip breakfast (which is crazy to me, you kids are missing out!) but the main reason I hear is simply “I don’t have time”. Luckily, I’ve learned over the years that it really doesn’t take that long to make something healthy in the morning!

Here is one of my favourite recipes that fills my cereal craving while being full of nutrients instead of sugar & additives! Yay!

Ingredients

1 cup cooked quinoa

1 gala apple

1.5 tbsp chia seeds

1tbsp REAL maple syrup

1/2 cup of unsweetened almond milk

cinnamon to taste

Directions

1) Cook quinoa  – I usually do 1 cup quinoa & 2 cups filtered water in a sauce pan. Bring quinoa to boil; reduce heat to low, partly cover and let simmer for 15 mins. Stir occasionally. Your quinoa should have a fluffy texture when it is finished!

TIP: On weekends I tend to do this in the morning while making breakfast, but during the week I like to have cooked quinoa in the fridge ready to go for any meal. This also saves time in the morning for all you sleep lovers!

2) Mix all ingredients together in a bowl and add milk – Really, thats it. How easy right!?

TIP: Today I used apples because they are in season and we have an abundant amount around the house, but you can use any fruit you choose! I frequently add berries to this dish as well.
